摘要
预冷是冷链物流过程中的一个功能组成,有无预冷或预冷的质量都影响着易腐食品在冷链物流过程中的质量。从预冷对田间热、水分损失、农产品的呼吸作用、酶的活性作用、微生物影响、营养损失等因素的影响,分析如何使用预冷环节有效地保证冷链物流过程中的食品质量,延长食品的货架期。
Pre - cooling is a functional component of cold chain logistics because the methodwithout or with pre - cooling affects the quality of perishable food during cold chain logistics. In term of the effect of pre - cooling on some fac- tors such as field heat, moisture loss, respiration of agricultural products, action of enzyme, effect of' microbes and nutrition loss, this paper analyzes how to ensure effectively the quality of food by pre - cooling during old - chain logistics and how to extend the shelf life of food.
