摘要
酱香型白酒是以优质糯高粱、小麦、水为原料,经传统固态法发酵、蒸馏、贮存、勾兑而成,其品质优劣除理化检测外还需结合感官尝评,而只有通过人的眼、鼻、口才能鉴别出色、香、味及综合口感风格,判定酒质好坏。
Jiangxiang Baijiu(liquor) is made of high quality glutinous sorghum, wheat and water through traditional solid fermentation, distilla-tion, storage, and blending. Except physiochemical measurement, sensory tasting is also an effective approach to judge the quality of Jiangx-iang Baijiu(liquor). Only observing, smelling, and tasting could identify the aroma, the color, and the taste of Jiangxiang Baijiu(liquor).
