摘要
为了探讨不同类型粮仓的储粮性能差异,以鲁原205小麦为样品,每间隔2个月进行取样、检测,研究了小麦在装配式保温仓、装配式不保温仓和焊接式不保温仓3种类型粮仓中储藏过程中的品质变化。结果表明,在储藏过程中小麦的发芽率与发芽势都会随着储藏时间的延长而降低,不保温仓中小麦的发芽率和发芽势降低得最快,且脂肪酸值较高;保温仓中小麦的面筋指数基本不变,吸水率与干面筋含量最高,降落数值最低;保温仓稳定时间与粉质质量数上升幅度较大,弱化度下降较大,保温仓中小麦的拉伸阻力最大,拉伸长度最短,且小麦的损失率最低。3种类型粮仓的储粮性能由高到低的顺序依次为:装配式保温仓>焊接式不保温仓>装配式不保温仓。
Quality of Luyuan 205 wheat sample was studied during storage in different grain elevator, including insulation elevator, uninsulation elevator and welding type uninsulation elevator. The samples was tested every 2 months. The results showed that with the storage time increase, germination energy and germina- tion rate in uninsulation elevator were the lowest compared to other two elevators, and fatty acid value was the highest. The water absorption of gluten and dry gluten eonten during storage in insulation elevator were the highest than other elevators, while falling value was the lowest, and the rising of stability time and farinorgraph qulity number was the highest, the degree of softening was the lowest. The reheological properties of doughs changed during storage in different elevator. In insulation elevator, the resistance o f wheat was the greatest, the extensibility was the shortest. And the loss rate of wheat was the lowest. It indicated that the quality of wheat stored in insulation elevator is more stable, The storage performance order of three types of granary from high to low was: insulation elevator〉uninsulation elevator 〉 welding type uninsulation elevator.
