摘要
全球食品市场上功能性乳制品层出不穷,人们对于新型益生菌乳制品的需求日益增长。双歧杆菌为人体肠道中具有代表性的一大类益生菌,具有营养、抗菌、免疫调节、抗癌等多种生理功能,是人体健康的重要标志之一。过去10年中,双歧杆菌已经成为国内外专家学者研究的热点,尤其是在乳制品中的应用研究已取得重要成就,但仍存在亟待解决的问题。综述了双歧杆菌的生理生化性质,包括形态特征和种类分布,此外还对其营养与益生作用在乳制品中的研究与应用进展进行综述。
There are a number of milk products containing bifidobacteria in the world market and thedemand for new products is increasing with the awareness of the potential health benefits of the consumption of products blended with bifidobacteria.Bifidobacterium,a representative class of probiotics in human intestine,is an important symbol for human health,because of their nutritional,antibacterial,immunomodulatory,anticancer and other physiological regulatory functions.Research and commercial interest in the genus Bifidobacterium have increased in the lastdecade especially indairy products.Great achievements have been achieved,but there still remain problems to be resolved.This review willdiscuss the general characteristics of bifidobacteria,current applications of bifidobacteria in milk products,and their nutritional and beneficial health properties.
