摘要
2000—2013年,中国鸡蛋消费量处于上升趋势,城乡之间、区域之间以及不同收入群体之间的鸡蛋消费存在明显差距。对鸡蛋消费的影响因素进行了回归分析,发现鸡蛋消费量与鸡蛋消费习惯、替代品猪肉的价格均呈现出显著的正相关关系,鸡蛋价格、居民收入和城镇化对鸡蛋消费的影响不显著。未来中国鸡蛋消费量将呈现持续上升趋势,城乡之间消费差距将缩小,而区域之间消费差距将扩大。
China's egg consumption showed a rising trend, but there existed a significant gap between urban and rural areas, different regions and groups of different income levels in 2000-2013. We described the influencing factors of egg consumption by regression analysis, and found that egg consumption had a significant positive correlation with purchasing habit and the price of pork, the substitute, while the effects of egg price, residents' income and urbanization were insignificant on egg consumption. In the future, the rising trend of egg consumption will continue, and the consumption gap between urban and rural areas will reduce while the one between regions may expand.
