农产品生产者视角下的食品安全源头治理对策研究

摘要 食品安全事关国计民生,社会和谐,是国家安定、社会发展的根本要求。农产品是食品链的源头,只有从源头治理,才能保证食品安全。文中首先分析了影响不同类别农产品质量安全的各种因素,应用HACCP原理对农产品生产全过程的各个环节进行危害分析,列出关键控制点,确定关键控制点并实施监控,当发现问题时采取纠正措施及应急预案,加以验证并保持相关记录。同时结合农产品生产的特殊性,阐述确保农产品安全生产所需要的管理方法,根据我国农产品生产技术供给的具体情况,建立农产品生产的标准化体系,从而实现农产品安全,进而实现食品安全。 Food Safety relates to National Economy, the People's Livelihood and the social harmony, which is the radical requirement for social development. Agricultural products are the source of food chain. Only tackling from the source, we can guarantee the food safety. At the beginning of this context, it analyzes the various factors that influence the quality safety of different types agricultural products, applies the principles of HACCP to the hazard analysis in all aspects of the agricultural products manufacture and process, lists the key control points, confirming the key limited point and implementing the monitor. When encountering the problems, treasure of correction and contingency plan should be taken, and giving the verification and keeping records. Meanwhile, combining the particularity of agricultural products, the management methods that ensure safety production of agricultural products was elaborated. According to the actual situation of technology supplies of agricultural products, it should establish the standard system for agricultural products manufacture, so as to realize agricultural products safety, and then realize the food safety.
