双流县市售腌卤肉制品亚硝酸盐污染现状与防制对策

摘要 目的了解市售腌卤肉制品亚硝酸盐污染状况,提出防制对策建议。方法 2009-2012年对双流县市售腌卤肉制品进行随机采样,采用GB5009.33-2010食品中亚硝酸盐与硝酸盐的测定方法进行检测并对检测结果按照国家食品添加剂使用标准GB2760-2011进行分析判定。结果共检测样品49份,合格39份,合格率为79.59%,最大检测值为180 mg/kg,为国家标准最大残留量的6倍。结论市售腌卤肉制品亚硝酸盐污染状况严峻,应通过加大食品安全监督执法力度,加强食品安全知识宣传,建立完善个人企业社会征信体系,确保食品安全。 Objective To analyze the situation of nitrite pollution in pickled and marinated meat products in Shuangliu county,and to put forward prevention measures and relevant suggestions.Methods During 2009-2012 in Shuangliu,pickled and marinated meat products sold on market were randomly sampled and were detected the contents of nitrite according to GB5009.33-2010.The results were analyzed and determined with standard of GB2760-2011.Results In total,49 samples were collected and 39 of which were qualified,the pass rate was 79.59%.The maximum value was180 mg /kg,which was six times as high as the national standards of maximum residue.Conclusion The nitrite pollution status of pickled and marinated meat products sold on market is severe.Comprehensive control and prevention measures should be implemented to ensure food safety,such as strengthening food safety supervision and law enforcement,propagandizing food safety knowledge,establishing perfect individual enterprise and social credit system.
