摘要
[目的]分析蛇鮈肌肉营养成分,对其营养价值进行综合评价。[方法]采用现有的国家标准测定蛋白质、脂肪、氨基酸和脂肪酸等含量。[结果]肌肉中蛋白质和脂肪的含量分别为(15.34±0.25)%和(2.39±0.82)%(质量分数,鲜样)。肌肉中检测出18种氨基酸和8种必需氨基酸,肌肉(鲜样)氨基酸总量(TAA)、必需氨基酸(EAA)和鲜味氨基酸总量(DAA)分别为13.02%、4.89%和5.10%,第一限制性氨基酸和第二限制性氨基酸分别为色氨酸、缬氨酸,必需氨基酸指数(EAAI)为49.92。肌肉中检测出19种脂肪酸,脂肪酸中PUFA、MUFA与PUFA的含量分别为48.64%、26.57%和24.79%,二十二碳六烯酸(DHA)和二十碳五烯酸(EPA)总含量5.04%。[结论]蛇鮈肌肉口味鲜美,食用价值较高。
[ Objective ] To study the nutritional composition in the muscle of Saurogobio dabryi Bleeker, so as to provide references for its processing. [ Method] The nutritional components in the muscle was analyzed by using conventional and biochemical analytical methods. [ Result ] The contents of crude protein and crude fat in the fresh muscle of S. dabryi were ( 15.34 ±0.25 ) % and (2.39 ± 0.82) %, respectively. Eighteen amino acids were found in the fresh muscle, and the content of total amino acids was 13.02%. The constitutional rate of the essential amino acids accorded with the FAO/WHO standard basically. According to nutrition evaluation in chemical score (CS) and amino acids score (AAS), the first limiting amino acid was Trp. The essential amino acids index (EAAI) was 49.92. There are mostly nineteen kinds of fatty acids found in the muscle. The contents of PUFA in fatty acids were 24.79%, and the ratios of DHA, EPA and ARA to the total fatty acids were 6.96%, 3.00% and 2.04%, respectively. [ Conclusion] It was indicated that S. dabryi is a good freshwater fishes with high edible value.
