刺嫩芽保鲜技术研究

Study on the Preservation Technology of Aralia elata Seem

以刺嫩芽为原料,通过护色工艺及保鲜剂配制的单因素及正交试验,结果表明:刺嫩芽最佳护色工艺参数为漂烫时间1.5min、漂烫温度90℃、抗坏血酸添加量0.2%、柠檬酸添加量0.5%。刺嫩芽保鲜剂最佳配方为海藻酸钠添加量0.06%、过氧化钙添加量0.02%、氯化钙添加量0.06%和亚硫酸钠添加量0.09%。

Taking Aralia elata Seem as main raw materials to do the single factor experiment and the orthogonal experiment for color process and antistaling agent configuration,the results showed that the best color process parameters of Aralia elata were 1.5min blanching time, 90℃ blanching temperature, 0.2%ascorbic acid, 0.5% citric acid. And the best formulas of antistaling agent were 0.06% Sodium Alginate,0.02% Ca O2, 0.06%Ca Cl2 and 0.09% Na2SO3.
