鸡肉风味是食品配料和调味品中普遍使用的经典风味,目前作为食品添加剂和食品配料应用于鸡肉风味制品中,天然纯鸡肉粉具有天然、安全、高质量、营养等优点。从当今市场消费变化和食品工业发展需求来看,此类产品必将成为未来市场的发展趋势。在传统牛角面包生产工艺的基础上,将天然纯鸡肉粉应用其中,作为原料研制出新型鸡肉风味牛角面包。
Chicken flavor has a classic role in food ingredient and seasoning. Green, satety, hxgh quality and good nutrition give pure chicken powder a big advantage over other chicken flavor products as food additive and food ingredient. Considering changes of market consumption and needs of food industry development, this sort of product will become a new trend in future market. Base on traditional process of croissant, this study is expected to use pure chicken powder as ingredient of recipe for making new-type croissant with chicken flavor.
