摘要 以食味品质好的日本品种作为对照,测定150个盘锦地区水稻(Oryza sativa L.)品种(系)的淀粉RVA谱及营养食味品质,并分析淀粉RVA谱特征值在品质育种方面的运用。结果表明,盘锦品种(系)直链淀粉、蛋白质及消减值均高于日本品种,而崩解值低于日本品种。按食味值把品种(系)分为低、中、高3部分,其中直链淀粉、蛋白质、崩解值及消减值在不同食味值区间内存在差异;食味值较高的品系其直链淀粉、蛋白质及消减值均较低;而崩解值较高。t检验显示,可以通过直链淀粉及蛋白质分析选择中、高食味值品系;而崩解值及消减值可以区分中、低食味值品系。 The rice RVA profiles of 150 cultivars in Panjin region were determined compared to those of Japanese varieties with good taste and quality, and analysed in the use for quality breeding. The results showed that the amylose, protein, and alkali-spreading value(ASV) in Panjin were higher than Japanese varieties, while junior to Japanese varieties in breakdown(BDV). According to the taste value, the 140 cultivars in Panjin were divided into low, medium, and high groups and amyose, protein, ASV and BDV had differences among different eating quality. High eating quality was related to low amylose, protein, ASV, and high BDV. The analysis of amylase and protein may determine medium and high cultivars, while BDV and ASV analysis may distinguish low and medium cultivars according to t test.
