摘要
糖型黄酒作为一种新型黄酒,以营养健康而著称,而相关的研究报道比较罕见。通过对低糖型黄酒的生产工艺、菌种选育、品质研究、功能性成分和发展问题等方面进行探讨,进一步加强低糖型黄酒的研究开发与宣传,将推动黄酒产业的发展。
Low-sugar Chinese rice wine is a new type office wine which is known for nutrition and health. However, related reports of low-sugar Chinese rice wine were rare at this stage. The production process of Chinese rice wine, strain screening, quality analysis, functional ingredients and developing problem were discussed in the paper, to strengthen the research and development of the low-sugar Chinese rice wine, and promote the wine industry development.
