摘要
目的:综述近几年番茄红素的研究进展。方法:通过检索近10年番茄红素相关文献,从理化性质、生理功能、制备和纯化方法以及测定方法等方面进行归纳。结果:番茄红素由于其特殊的化学结构,具有抗氧化、抗肿瘤、保护心血管和增强免疫力等生物学功能。近些年来,有机溶剂浸提法、超临界流体法、微生物发酵法和化学合成法等制备方法,色谱法、皂化法、重结晶法和膜分离法等纯化方法,以及紫外可见分光光度法、高效液相色谱法和差示量热扫描法等检测方法的不断发展,促进了番茄红素在保健食品和药品中的研究和应用。结论:随着基因工程的发展,转基因以及DNA重组技术的不断应用,番茄红素在医药保健领域具有进一步的研究价值和良好的应用前景。
Objective: To summarize research progress of lycopene in recent years. Methods: The literature in the recent decade were reviewed and summarized in aspects of physic-chemical properties, biological functions, preparation, purification methods and determination methods. Results: Due to its special chemical structure, lycopene has a variety of biological functions beneficial to humans such as anti-oxidation, anti-tumor, protection of cardiac vessels and enhancement of immunity. In recent years, the advances in preparation and detection methods of lycopene promote the continuous development of the research and application of lycopene in the health care products. These advances are seen in preparation methods such as organic solvent extraction, supercritical fluid method, microorganism fermentation and chemosynthesis, and in purification methods such as chromatography, saponification, recrystallization and membrane separation, as well as in detection methods such as ultraviolet spectrophotometric method, high performance liquid chromatography and differential scanning calorimetry. Conclusion: With the development of gene engineering in the continuous application of transgene and recombinant DNA technology, lycopene has further research value and good prospects in the field of health care
