黄河鲤与松浦镜鲤可食部位脂肪酸含量分析 被引量:2

摘要 研究了黄河鲤与松浦镜鲤不同部位脂肪酸的种类及含量,采用气相色谱法对2种鲤背部肌肉、腹部肌肉、尾部肌肉、脑、眼和鳔中脂肪酸的含量进行了测定。结果表明:2种鲤中均检测到12种脂肪酸,其中饱和脂肪酸(SFA)有4种,以棕榈酸(C18∶0)含量为最高;单不饱和脂肪酸(MUFA)3种,主要为油酸[C18∶1,(n-9)];多不饱和脂肪酸(PUFA)5种,主要是亚油酸[C18∶2,(n-6)]。2种鲤均是∑MUFA>∑PUFA>∑SFA,但各脂肪酸在不同组织、器官中的含量有所差异(P<0.05)。 In order to study the kinds and contents of fatty acids in different edible tissues of Huanghe common carp and Song -pu mirror carp, we determined the fatty acids in the dorsal muscle , abdominal muscle, tail muscle, cerebrum, eye and swim blad-der of these two species of carp by gas chromatography .The results showed that 12 kinds of fatty acids were detected in Huanghe common carp and Songpu mirror carp .Among them, there were four kinds of saturated fatty acids (SFA), three kinds of monounsat-urated fatty acids (MUFA), and five kinds of polyunsaturated fatty acids (PUFA).Among SFA, the content of palmitic acid (C18∶0) was the highest.The compositions of MUFA and PUFA were mainly oleic acid (C18∶1,n-9) and linoleic acid (C18∶2,n-6), respectively .The content of MUFA was the highest , and that of SFA was the lowest in 2 species of carp .There were significant ( P〈0.05) differences in fatty acid content in various tissues and organs of these two species of carp .
