摘要
传统的大曲质量指标体系包括感官和理化指标,感官指标占60%的权重,基本是以感官决定大曲等级。新质量指标体系包括生化、理化和感官指标,感官指标只占10%,在评定大曲等级时,生化、理化和感官指标作为整体来确定大曲质量。采用这两种指标体系中的分析方法对相同的大曲样品进行了检测,通过对比分析其传统指标与新指标参数以及判别的质量等级的差异,印证了新的质量指标体系在评判大曲质量中更具有现实指导意义。
Traditional Daqu quality indicators system includes sensory indicators(accounting for 60 % weighting) and physio-chemical indicators. Basically, sensory indicators determines Daqu quality grade. However, new Daqu quality indicators system includes biochemical indicators, physiochemical indicators and sensory indicators(only accounting for 10 % weighting). During the evaluation of Daqu quality grade, biochemical, physio-chemical and sensory indicators determine the quality of Daqu as a whole. In this study, the two systems were applied to evaluate the same Daqu samples. Through comparative analysis of the difference between the indicators between traditional and new Daqu quality system and their evaluation performance in practice, it proved that new Daqu quality indicators system was more suitable for the evaluation of Daqu quality.
