工作过程系统化的食品安全与质量控制课程教学改革

摘要 工作过程系统化的课程教学内容改革是高职院校提高学生职业能力培养的重要途径和专业课程教学改革的主要方向。文章以高职食品安全类专业的核心课程食品安全与质量控制为例,探索基于工作过程系统化的课程教学内容改革。以食品企业安全与质量控制岗位的实际工作任务和过程为引导,构建与实际工作过程一致的教学过程,实现课程教学与实际工作近距离接轨,提高学生的综合职业能力。 Reform of curriculum and teaching based on systematization of working process is an important measure for higher vocational education to improve students’ vocational ability. It is the main direction of teaching reform of specialized courses. This paper explores teaching reform for food safety and quality control courses based on systematization of working process. This course is the core course of the food safety class specialty in higher vocational education. According to the typical task and process of the food safety and quality control posts, the construction of the teaching process keeps consistent with the actual work process. It achieves the linkage of the curriculum teaching and the actual work, and improves the comprehensive vocational ability for vocational college students.
