摘要
食品微生物学是高等院校食品类本科专业的核心课程之一。预测微生物学及其在定量风险评估上的应用是近年来国内发展迅速的研究领域,食品微生物学课程中增加预测微生物学和风险评估,使大学生理解并初步掌握微生物建模和风险评估的基本理论和实践方法,了解当前食品安全控制研究热点,为将来参与食品安全监管工作或过渡到研究生深造奠定基础。
The course Food Microbiology is among the core courses of food majors of universities. Research on predictive microbiology and its application on quantitative risk assessment increases rapidly in recent years. Adding predictive microbiology and risk assessment contents would be helpful for college students to understand the basic theory and practice of microbiological modelling and risk control, and also provide beneficial reference for possible work of graduates on food safety supervision and management.
