摘要 以漳州平和"坂仔"香蕉为试材,通过对比PE膜包装和未包装的香蕉在(-1±0.5)℃、(0±0.5)℃、(3±0.5)℃、(6±0.5)℃、(8±0.5)℃、(10±0.5)℃、(12±0.5)℃和(14±0.5)℃下贮藏期间出现的冷害程度及后熟情况,并对(6±0.5)℃下贮藏的香蕉果实冷害相关指标的测定和分析。研究表明:PE膜包装可以有效地减轻香蕉果实冷害,较好地维持果皮亮度,延缓可溶性蛋白质的降低和果皮细胞膜透性的升高,在一定程度上还可以延缓香蕉果实的成熟衰老。 With the banana variety ‘Banzai' as material, this paper studies and contrasts the chilling injury and post-ripening process of bananas stored with PE film packaging and unpacked bananas at temperatures of (- 1 ± 0.5) ℃ , (0 ±0.5) ℃, (3 ±0.5)℃, (6 ±0.5) ℃, (8 ±0.5) ℃, (10± 0.5 ) ℃, (12 ± 0.5) ℃ and (14± 0.5) ℃ and measures and analyzes relevant indicators of banana chilling injury at temperatures (6 ± 0.5) ℃. The result showed that bananas with PE packaging can effectively reduce its fruit chilling injury, maintain peel brightness, delay the reduction of soluble protein and the increase of peel cell membrane permeability, which, to some extent, delays the ripening and senescence of bananas.
