Polyunsaturated fatty acids(PUFAs),as essential bioactive substances for living organisms, have important physiological functions. The source and metabolism, the general situation and possible mechanism of improvement of learning and memory of PUFAs were discussed. The results indicated that PUFAs were significant component of brain tissue, and played an extremely important role in growth, metabolism and health, especially in strengthening learning and memory of brain. Researching on mechanism of PUFAs in improving the learning and memory could not only provide scientific basis for the development of health products, medicines etc,but also provide a breakthrough in treatment of diseases related to brain.
