摘要
生加工水产品受到沙门氏菌的污染因素较为复杂,本文通过对养殖水产品生加工过程中的原料、加工接触面、人员健康和虫害等方面进行沙门氏菌污染的原因分析,提出风险管理措施,起到预防产品受沙门氏菌污染作用,提高养殖水产品的安全性。
There are complicated factors which cause the aquaculture products to be contaminated by salmonella in raw processing. In this article, we analyzed and evaluated the reasons of salmonella contamination in the raw processing of aquaculture products including the raw fish, the unhygienic contact surface, the unhealthy workers and the injurious insect. We also presented the risk management measures which could prevent the contamination and enhance the security of aquaculture products.
