Current status and prospect of modern nutriology research on whole-grain food and its health factors

摘要 全谷物食品由于其对人体多种慢性疾病的改善作用,目前已成为全球关注的热点。本文从现代分子营养学的角度全面综述了全谷物食品及其生理功能,并针对其在我国的发展现状和存在问题提出了推进全谷物食品发展的建议与展望。 Whole-grain food has become the focus of global concern because of its health-enhancing benefits.The whole-grain food and its physiological function from the aspects of modern molecular nutrition research were summarized and some suggestions and prospects according to the current development and the existing problems in our country were pointed out.
