摘要
啤酒花及其制品在啤酒生产中应用十分广泛,本文综述了新疆产青岛大花从采摘、加工到应用的相关过程,文中对啤酒花的采摘工艺和颗粒酒花的加工工艺做了重点阐述,并简要介绍了几种常见的酒花制品的加工和应用方法,为掌握加工颗粒酒花质量的关键控制点和啤酒从业者之间的交流、探讨提供参考。
Hops and its products are used extensively in beer brewing.The picking,processing and application of Qingdao hops grown in Xinjiang were reviewed.The technology of hops picking and hops-pellet processing was mainly described,and some processing and application methods of common hops products were also introduced,for the sake of offering useful references for controlling the quality of hops-pellet in its processing and discussing with other beer brewers.
