摘要
以苹果、猕猴桃、葡萄、脐橙、西瓜等5种代表性水果为试材,对折射仪法测定水果可溶性固形物含量的两种样液制备方法(挤汁法和匀浆法)进行了比较分析。结果表明,挤汁法和传统的匀浆法具有相同的可靠性和准确性。用挤汁法代替匀浆法,检测更加简便,而且能实现水果可溶性固形物含量的现场检测。
Two methods of preparing juice including juice-squeeze and traditional homogenization were compared by refracto- metric method for determing total soluble solids in 5 kinds of fruits including apple, kiwifruit, grape, navel orange and wa- termelon.The results showed that two methods were equivalent in reliability and aeeuaracy. By replacing homogenization with juice-squeeze ,the refractometric method for determing total soluble solids in fruits was simple for on-site test.
