摘要
大黄鱼是我国主要的经济鱼类之一,但由于其蛋白质等含量较高,因此极易腐败变质。以大黄鱼为研究对象,采用获得的不同浓度的芽孢乳酸菌胞外产物处理大黄鱼,通过测定挥发性盐基氮(TVB-N)、K值、硫代巴比妥酸(TBA)等指标以及感官评价来分析芽孢乳酸菌胞外产物对养殖大黄鱼贮藏的影响。研究结果发现,大黄鱼在浓度为1×106 cfu/m L芽孢乳酸菌胞外产物的处理下,其贮藏效果最好,货架期较对照组相比,延长了5 d。该研究为养殖大黄鱼专用防腐保鲜制剂的研究奠定了一定基础,具有重要的意义。
The large yellow crockar (Pseudosciaena crocea) is one of the main maricultured fish. However, the fish is easy to spoilage due to the high contents of the proteins and other matters. The large yellow crockar (Pseudosciaena crocea), treated with different concentrations of extraceilular products produced by Bacillus coagulans LL1103, was used to studied using the indexes including total volatile basic nitrogen (TVB-N), K value, thiobarbituric acid (TBA) and sensory evaluation. The present study was to analyze the effect of extracellular products produced by Bacillus coagulans LLl103 on the quality of large yellow croaker during storage. The results indicated that the quality of large yellow croaker was the best under the concentration of 1×10^6 cfu/mL and the shelf life was also extended 5 days. The present study provides a foundation for the research of special preservative preparation using in maricultured large yellow croaker. It has important significance.
