摘要
为深入了解深圳市售水产干制品的质量安全状况,针对鱼干、虾干中两类水产干制品中甲醛、二氧化硫残留量、农药残留(敌敌畏、敌百虫)、兽药残留(孔雀石绿、氯霉素、土霉素、四环素、金霉素、恩诺沙星、硝基呋喃代谢物、磺胺类药物)等18种潜在危害物开展了一次风险调查,发现鱼干中存在使用违禁农药敌敌畏的情况,虾干的主要风险来源为违禁兽药硝基呋喃类药物和过量使用亚硫酸盐类保鲜剂。
In order to evaluate the risk of food safety in dehydrated aquatic product sold by Shenzhen, the content of 18 potential chemical pollutants such as formaldehyde, sulfur dioxide, pesticide and veterinary drug residue in dehydrated shrimps and fish was investigated. The results showed that prohibited pesticide dichlorvos were used in dehydrated fish; the main risk in dehydrated shrimps is using prohibited nitmfuran drugs and over using sulfite as ant staling agent.
