摘要
研究开发了超高效液相色谱-串联质谱(UPLC-MS/MS)仪同时检测广式腊味制品中组胺、尸胺、腐胺、2-苯乙胺、色胺5种常见生物胺含量的新方法。新方法使用UPLC-MS/MS,与现行国家标准使用液相色谱方法检测相比较,所需时间大大缩短,用内标法定量可减少因前处理过程造成的损失,而且在阳性样品确证以及定量检测准确度方面都更有优势。
Abstract The new method for UPLC/MS/MS determination of five kinds of biogenic amine( histamine, eadaverine, putrescine, 2-phenethylamine, serotonin) in Guangdong style cured meat products was developed. Compared with the current national standard methods of liquid chromatography, utilizing UPLC/MS/MS could greatly reduce time, with internal standard method of quantitative could reduce losses caused by the pretreatment process, and has more advantages in confirming the positive samples and quantitative detection accuracy.
