“五谷”营养及其在中国的历史演变

摘要 "五谷"营养成分丰富,是人民的主要食物,因地域物产不同,"五谷"一般有两种内容。在我国五千年的历史过程中,"五谷"经历了探索期、形成期和发展期,尤其在漫长的两千年演变期中,伴随对外交流的不断深入,物种逐渐丰富,"五谷"的耕种面积和相对重要性发生了演变,也对历代人口产生影响。随着现代食品加工业的发展,五谷加工和食用从粗糙到精细,又从精细追求全营养,人们对"五谷"营养的认识也在不断变化。 "Five cereals" is rich in nutrition, and is main food of people. There are two kinds of views about what are they, because regional products are different. During 5000 years' history of our country, it experienced groping period, decided stage and developmental time. In the 2000 years evolution period, along with deepening of foreign exchange, species of food be- came abundant and farming area and the relative importance of "Five cereals" evolved, which also impacted population of peo- ple. With development of modern food industry, processing and consumption of it became fine from coarse process and pursued the all nutrition, knowledge about food is changing.
