摘要
以木薯全粉、木薯粉和木薯淀粉为研究对象,分析不同试验方法对碘蓝值检测方法的可靠性,提出改进方法。结果发现,样品质量、水浴温度和检测波长等因素对碘蓝值的检测影响十分显著,但不同处理结果均发现碘蓝值的最大吸收峰在波长620~640nm。为此,推荐3种木薯产品碘蓝值检测方法为样品质量0.25g,水浴温度70.0℃,检测波长640nm,该检测结果较为可靠。
The whole cassava flour (WCF) , cassava flour (CF) and cassava starch (CS) are subjected to compare the reliability of detective methods for starch-iodine value under the different treatment. The results show that it's significant difference effects from sample quantity, bathing temperature and detective wavelength. While, they are showed the highest absorption peach at the wavelength range from 620~640 nm. The better detective method for three cassava primary products is recommend, that is based on 0.25 g sample quantity, 70.0 ~C bathing temperature and 640 nm detective wavelength.
