摘要
航天诱变毛霉(Mucor) ZY-3菌株是一株能够耐高温的菌株,产酶适宜温度较高,在38~42℃的条件下ZY-3的生长状况最好,蛋白酶活性达到较高范围.用ZY-3代替原始高大毛霉(Mucor mucedo)菌种接种豆腐坯,结果表明,腐乳发酵阶段抗污染力强、长势好,成品滋味鲜美.毛霉ZY-3生产的腐乳符合商业标准SB/T 10170-2007编乳》的要求,以颜色、风味、特色、固形物含量等作为影响论域的主要因素,进行了产品的模糊综合评价,证明毛霉ZY-3菌株可以用于腐乳生产.
Mucor ZY-3 is a space mutation strain with high temperature resistance, and it is suitable in high temperature for enzyme production. The optimal growth temperature for strain ZY-3 growth was 38-42 ℃, and the protease activity reached a high range. Tofu pehtze was inoculated with strain ZY-3 instead of the original M. mucedo, and the results showed that sufu showed strong anti-pollution ability, good growth and delicious taste. Sever- al kinds of sufu fermented by strain ZY-3 conforming to SB/T 10170-2007 were evaluated by fuzzy comprehensive evaluation, using color, flavor, characteristics, and solid content as main evaluation factors. It was proved that strain ZY-3 could be used in the production of sufu.
