摘要
介绍了质谱分析技术、色谱分析技术、光谱分析技术、热分析技术和同工酶分析技术等现代分析技术在蜂蜜掺假鉴别中的应用新进展,旨在为我国蜂蜜掺假鉴别新技术开发应用和相关职能部门的监管提供参考,对于规范国内蜂蜜市场秩序,促进蜂蜜市场的良性发展具有重要意义。
In order to provide some references to explore a new approach to identify the honey quality and adulteration, modern instrumental analysis for honey adulteration were reviewed in this paper, including mass spectrum analysis, chromatogram analysis, spectroscopy analysis, thermal analysis and isozyme analysis. It will be important to regulate the order of honey market and promote the prosperous development of honey industry.
