摘要 通过对本公司浓香型白酒酿造车间回收尾酒进行取样分析研究,采用降低尾酒酒度、增加尾酒数量的验收方法,大量收集到尾酒中更多的香味成分和乙醇。尾酒经贮存、净化后在中低档或固液结合的产品中勾调使用,能有效提高产品质量和降低产品成本。同时尾酒回收工艺的改进,保证了车间蒸粮的熟度和降低糟醅酸度,促进了糟醅出酒率和质量的提高。 In this study, the recycled Nongxiang ending liquor from our distillery was used as the research object. Through the improvement of the reclamation techniques of ending liquor (reducing the alcohol content and increasing the quantity of ending liquor), more flavoring compo-nents and ethanol were collected from ending liquor. Then after storage and purification, ending liquor could be used as blending liquor for me-dium/low-grade liquor or liquor produced by solid&liquid-combined fermentation, which could effectively improve liquor quality and reduce production costs. Meanwhile, the improvement in ending liquor reclamation techniques could ensure the maturing degree of grains in steaming, reduce the acidity of fermented grains, increase liquor yield of fermented grains, and improve liquor quality.
