分光光度法测定香肠中亚硝酸盐含量分析 被引量:14

摘要 香肠中的添加剂亚硝酸盐,可以起到护色、呈色作用,还能起到防腐作用。但摄入量大时,会对身体有毒害作用。对市售的香肠进行取样,通过分光光度法进行亚硝酸盐含量的测定,精密度试验RSD在0.41%~1.2%之间,回收率在96%~104.6%之间。实验结果表明,所测香肠样品中,亚硝酸盐含量在3.18 mg/kg^11.4 mg/kg之间,均符合食品添加剂国家安全标准。但散装香肠亚硝酸盐含量明显偏高。 Additive of nitrite in sausage, can play the role of protecting color, color effects, can also play a role in anti-corrosion. The samples were measured by means of the sausage Market Sales of nitrite by spectrophotometry , the precision test of RSD between 0.41%-1.2%, the recovery was 96%-104.6%, the measured samples of sausage, nitrite content between 3.18 mg/kg-11.4 mg/kg, are in line with national safety standards of food additives. But the content of nitrite in sausage was significantly higher in bulk.
