摘要
实验以新鲜蓝莓为原料,选取不同的料液比、提取时间、超声功率、盐酸质量分数为参数,采用单因素和正交试验方法,以酸性乙醇溶液为溶剂并铺助超声波提取蓝莓中的花青苷,得出了最佳提取工艺。用超高效液相色谱-三重四级杆串联质谱法对蓝莓花青苷提取物的组分进行了定性分析,结果表明:蓝莓花青苷提取物有四种组分:芍药素-3-阿拉伯糖苷、芍药素-3-半乳糖苷、锦葵素-3-半乳糖苷和矢车菊素-3-阿拉伯糖苷,为蓝莓的综合应用提供理论依据和技术参考。
In this experiment,use fresh blueberries as raw material,select different solid-liquid ratios, extraction time,ultrasonic power,hydrochloric acid mass fraction as parameters,adopt single factor and orthogonal experiment methods to extract anthocyanin by acidic ethanol solution assisted with ultrasonic wave,and then determine the optimal extraction condition.Analyze blueberry anthocyanin components using UPLC-MS/MS,the results show that blueberry anthocyanins extract includes four components: peonidin-3-Arabia glucoside, peonidin-3-galactosidase, malvidin-3-galactosidase and cyanidin glycosides-3-Arabia. This experiment provides theoretical and technical reference for integrated use of blueberry.
