摘要 本文通过对发生在20世纪80年代满汉全席热背景下诞生的《满汉全席源流考述》著作的梳理与批评,阐释了《满汉全席源流考述》给近30多年以来乱象丛生的中国饮食文化研究提供了注重考据,无证不立的研究方法及不断系统、深化、刷新和对比、分析文献史料的研究范本。同时,还为了解"满汉全席"发生、发展的历史过程提供了线条明晰的全貌,也为读者提供了阅读原著的更有效帮助。 This paper through carding and criticism Manhanquanxi " works on the history of the birth in twentieth Century 80 time Manhanquanxi thermal background" , explains "Manhanquanxi" Research on the history of China diet culture to the nearly thirty years since the chaos of offers to textual research, the research method of undocumented does not stand and continuous system, deepening, refresh and contrast analysis of historical documents, the research model. At the same time, but also to understand the histori- cal process of the " Manhanquanxi" occurrence, development provides a clear line of the picture, but also provides a more effective help for readers to read the original.
