介绍了罐头食品的发展现状,分析影响罐头食品安全性的因素,以热力杀菌工艺为例,对罐头杀菌的不同阶段进行详细的描述;同时介绍了新的杀菌技术在罐头食品中的应用;并展望了罐头食品的发展机遇。
The development status of canned food was introduced. The factors influencing canned food’ s safety were analyzed. And the thermal sterilization process was taken as an example. The different stages of canned food sterilization were described in detail. Meanwhile the application of new sterilization technology in canned food was proposed. The development opportunities of canned food were expected.
