摘要
开发能够替代鱼粉的蛋白资源一直是水产养殖界探索的热点。利用豆粕制备的大豆肽以其重要的生物学功能和营养价值得到了广泛的关注。该文主要综述了大豆肽的理化性质和生理活性,及其在水产养殖中的应用和生产运用中存在的不足。
Developing protein resources which can replace fish meal has been a hot research. Soybean peptide made by soybean meal has received widespread attention for its important biological functions and nutritional value. This paper mainly introduces the physical and chemical properties and physiological activity of soybean peptide, sums up the problems in aquaculture production and application.
