铁缺乏对多不饱和脂肪酸合成代谢的影响 被引量:1

摘要 多不饱和脂肪酸(PUFA)是人体必需的脂肪酸,其对人体的功能及作用机制已经过大量研究和论证,且主要集中在生命早期的神经发育和以后的智力、认知功能等方面。PUFA家族中诸如n-3系列的EPA、DHA以及n-6系列的ARA等是目前营养强化领域研究的热点。铁作为辅酶参与构成了体内多种重要的酶类并发挥相应的代谢调节功能。本文尝试通过铁缺乏对PUFA合成代谢影响的阐述以期两者在食品强化领域得到更好的应用。
