摘要
在国内烹调技术中,炒是运用广泛且较灵活的一种烹调方法。而炒中最为精细、独特的技法便是滑炒。本文主要探讨了滑炒菜的技法,对原料的选择、加工、上浆、油滑、烹制成菜的过程进行了详细的阐述,并例举了实际菜例。
Among the home cooking, cooking is a widely used and more flexible method. And the most delicate and unique skill is slippery fry. This paper mainly discusses the cooking techniques, the selection of raw materials, processing, sizing, flattering, cooked food process carried on the detailed elaboration, and illustrates the practical example of food.
