摘要
生物保鲜剂是从动物、植物、微生物中提取或利用生物工程技术获得的对人体安全的保鲜剂,具有高安全性、高效用和应用范围广等特点。通过植物源、动物源、微生物源概述了生物保鲜剂在鱼类保鲜中的应用现状,并分析了各应用的优缺点以及其发展前景。
Bio-preservatives are extracted from plants, animals, micro-organisms or made by bio- engineering technology, that have characteristics of high safety, high efficiency, wide range of applications. The application status of bio-preservative in tim preservation was reviewed based on plantderived, animal-derived, microorganisms-derived. Finally, the advantages and disadvantages of each application were analyzed, as well as the development prospect.
