摘要
目的文章以梅花鹿的鹿茸、鹿血、鹿心、鹿尾和鹿角盘为材料,初步探索鹿产品的药用价值与其水解氨基酸含量之间的相关性。方法采用高效离子交换色谱法测定样品中17种水解氨基酸的含量,对鹿产品中各氨基酸含量及构成进行比较分析的同时,采用SPSS统计分析系统进行聚类统计。结果该五种鹿产品中均含有17种常规氨基酸,种类齐全。鹿血、鹿心、鹿尾、鹿茸和鹿角盘氨基酸总量分别为58.45,52.97,45.54,39.61,21.38g/100g,明显高于其它同类型药用保健产品。其中鹿血的E/T值为45%,E/N值为0.82,完全符合FAO/WHO提出的理想蛋白质的要求。结论采用SPSS统计分析系统对鹿茸、鹿血等鹿产品的氨基酸构成进行聚类分析,发现所得到的聚类结果与其公认的疗效分类基本对应,从而可以推断鹿产品中水解氨基酸的含量及构成在一定程度上影响其药用价值。
Objective The paper analyzed and compared the amino acid composition of 5 deer products,and on this basis tried to do a tentative exploration in the relationship between medicinal value and amino acid composition by the SPSS statistic system. Methods The17 kinds of hydrolysate amino acid in the velvet antler,deer blood,cervi cauda,sika deer heart and deer antler base were determined by high- performance ion- exchange chromatography. Results The results showed that 17 kinds of amino acids( Asp,Thr,Ser,Glu,Gly,Ala,Cys,Val,Met,Ile,Leu,Tyr,Phe,Lys,His,Pro and Arg) were found in all five deer products. The total amino acids of the deer blood,sika deer heart,cervi cauda,velvet antler and deer antler base were 58. 45 g /100 g,52. 97 g /100 g,45. 54 g /100 g,39. 61 g /100 g,21.38 g /100 g,respectively. Obviously,the amino acid contents of above deer products were higher than that of other pharmaceutical health care products. Among them,the E / T value of deer blood was 45% and the E / N value also reached 0. 82. The compositions of amino acids were reasonable because it's entirely consistent with the protein reference pattern provided by WHO / FAO. Conclusion The cluster analytical method had been applied to analyze the amino acid contents of these deer products by using SPSS statistic system. We found the result of cluster analysis was consistent with the acknowledged efficacy,it provided useful data for probing into the relationship between the amino acid composition of 5 kinds of deer products and their medicinal properties.
