摘要
桃是人们备受喜爱的水果之一,但由于桃果实采收时气温较高,加之外界环境的变化,采后极易腐烂变质。本文从桃果实采后呼吸生理研究、桃果实采后乙烯生理研究、桃果实采后酶生理研究、桃果实采后营养成分含量研究、桃果实采后果实质地研究和桃果实采后贮藏病害研究等六个方面阐述了桃果实采摘后的生理生化变化,为其桃果实采后贮藏保鲜研究提供理论依据。
