乳制品及婴幼儿配方食品中蜡样芽孢杆菌的快速检测 被引量:2

摘要 蜡样芽孢杆菌(Bacillus cereus)是一种常见的食源性致病菌,通过产生腹泻毒素和呕吐毒素导致食物中毒。针对蜡样芽孢杆菌的特异性卵磷脂-水解磷脂酶C基因(pc-plc)进行实时荧光PCR检测,开发出一种新的快速检测方法,能够快速准确地检测乳制品及婴幼儿配方食品中的蜡样芽孢杆菌。该方法具有较高的特异性,灵敏度可达150 g-1。人工污染实验表明,在婴儿米粉中蜡样芽孢杆菌检测灵敏度可到200 g-1;在巴氏杀菌乳、酸奶、婴幼儿奶粉中检测灵敏度为103g-1。 Bacillus cereus is a common food-borne pathogenic bacterium, causing food poisoning by producing diarrhea toxins and vomiting toxins. This experiment carried out real-time PCR based on the Bacillus cereus specific lecithin - hydrolysis phospholipase C gene (pc-plc), de- veloped a new method for quick and accurate detection of Bacillus cereus in dairy products and infant formula food. This method had a high specificity and sensitivity of 150 g-1. In artificial pollution test this method can assay 200 g-1 from Baby rice flour and 103g-1 from pasteurized milk ,yoghurt and baby milk.
