摘要
神曲是由面粉和/或麦麸、苦杏仁、赤小豆、青蒿、苍耳、辣蓼按照一定比例混匀后发酵而成的复方中药。性温,味甘、辛;归脾、胃、大肠经,具有健脾消食,理气化湿的功效。作为传统曲剂,神曲的发酵工艺直接影响产品的质量。本文就神曲的发酵工艺和质量标准进行系统的综述。
Shenqu is a traditional compound medicine manufactured by fermentation, which is made of flour and/or bran, Armeniacae Semen Amarum, Vignae Semen, Artemisiae Annuae Herba, Xanthii Fructus and Marshpeper Smartweed Herb. It is warm in property,acrid-sweet in taste and distributed to spleen, stomach, colon. Shenqu has the function of invigorating spleen forpromoting digestion and regulating Qi-flowing for eliminating dampness. As a traditionalfermented medicine, the fermentation processdirectly affects the quality.The review systematically focuses on the fermentation technology and quality standard of Shenqu.
