黄曲霉毒素及其生物转化物是对人和动物非常有害的食源致癌物,是世界上分布最广泛和最令人担忧的食品污染物。主要从黄曲霉毒素的特性、食品种类污染及地区污染情况3个方面介绍了我国食品中黄曲霉毒素污染现状。

Aflatoxins and its biotransformation products have serious harmful effects on human and animal health, they are the world＇s most widely distributed and most worrying food contaminants. The pollution status of aflatoxins in food in China was introduced from three aspects of aflatoxins characterisrics, food contamination and pollution area of aflatoxins.
