摘要
通过对当地村民的访谈、资料整理、野外植物调查和鉴定比对,对麦淋酒酒曲中"百草尖"的配方进行了研究,明确了酒曲配方中常用到的100种植物,并对其进行了系统科学的名称考证,为制曲工艺中添加"百草尖"的具体数量和实现标准化提供了重要参考。
The herb bouquet prescription for the production of Mai-lin liquor starter was studied through the interview with local villagers, data compilation, and the investigation and identification of wild plants. The results suggested that there were 100 kinds of commonly-used plants in-volved in such prescription. Furthermore, the textual research on the names of those plants were carried out which provided important reference for adding specific number of plants in starter making.
