摘要
农产品加工与贮藏学是跨学科交叉的一门应用学科,是高等院校食品科学与工程的核心课程。通过长期实践,构建课程体系,依据专业发展特点,完善教学内容,在实验教学、教材建设、课程网络建设方面进行大胆改革,以培养学生创新思维和创新能力为目的,采用探究式、启发式和类比式教学方法,突出对学生化学能力和研究能力的培养,教给学生思考问题、研究问题的方法。
Processing and storage of agricultural products is a application science of interdisciplinary, is the core course of in food science and engineering in university. Through long-term practice, the curriculum system is constructed, and the teaching content is developed based on the professional characteristics. In the experimental teaching, teaching material construction and course construction of network, we reform on the bold, and cultivate student's innovative thinking and innovative ability. For the purpose of using inquiry teaching heuristic and analogy method, highlight the cultivation of student's chemistry and research ability, teaching students to think about problems and research problems.
