摘要
目的通过定期或不定期的监督检查和采样监测,规范全市托幼机构食堂的卫生安全管理工作,防止通过食物引发传染性疾病和食物中毒事件的发生,保障全市学龄前儿童的饮食卫生安全环境。方法对全市74家托幼机构食堂进行现场卫生安全监督检查和餐饮具消毒效果监测,按照《食饮具消毒卫生标准》GB14934-1994进行检测和评价。结果现场监督检查发现有一小部分食堂的内部卫生状况较差、卫生管理混乱、硬件设施投入不到位,从业人员卫生安全知识欠缺等诸多安全隐患。餐饮具消毒效果检测合格率偏低但逐年有所提高。结论有大部分托幼机构在食堂的投入、建设和管理方面做得比较到位。但总的来看还存在一些突出问题。餐饮具消毒效果检测合格率偏低,但在逐年提高,其中2012年比2011年有极显著提高(x^2=17 P<0.01),2013年比2012年有较显著提高(x^2=4.7 0.05<P<0.01)不同类型托幼机构之间无显著性差异(x^2=2.9 P>0.05).
