摘要
全文介绍了祁红初制自动化生产线中萎凋、揉捻、发酵、干燥各工序的生产过程及工艺技术特点,以及动态循环萎凋和动态变温发酵等新工艺技术。萎凋采用萎凋机对茶鲜叶进行动态循环萎凋;揉捻采用初揉-解块筛分-复揉的揉捻方式;发酵采用动态变温发酵;烘干采用毛火-回潮-足火的干燥方式。自动化生产线的建立提高了生产效率,降低了劳动强度,改善了生产的卫生状况,实现了规模化生产。新工艺技术的发明在保证祁红传统加工要求的基础上,一定程度地提高了产品质量。
This paper introduced the productive process and the technological characteristics of the withering, rolling, fermentation and drying of Keemun Black Tea primary processing automatic production line. The dynamic circulative withering technology and the dynamic variable temperature technology were introduced in detail. The dynamic circulative withering method was used in withering; rolling method was first rolling-deblocking and screening-second rolling. Dynamic variable temperature technology was used in fermentation; drying was done by high temperature in short time-damping-dried by low temperature in long time. The establishment of the automatic production line of primary processing improved the production efficiency, reduced the labor intensity, improved the sanitary condition of production and achieved a large-scale production. The new technologies not only met the requirement of traditional Keemun Black Tea processing, but also improved the quality of the product at a certain degree.
