摘要
屠宰环节是猪生产链的中间环节,猪个体在该环节会相继转换为胴体以及分割肉,个体的转变会导致溯源信息链断裂,因此在该环节需要解决因个体转变带来的信息流传递问题。本文以莱芜黑猪作为研究对象,分析了猪肉溯源系统在屠宰环节的溯源信息组成、标识方法以及信息流传递,并结合莱芜猪的具体屠宰工艺,设计了屠宰环节的标识载体、信息流传递方式以及信息管理系统。本系统将RFID电子挂标作为中间标识载体,以生猪去头和胴体分割为关键控制点,建立了信息传递机制,实现信息的高效采集和信息流的无缝连接,为猪肉全程溯源系统的建立提供了可能。
Slaughter tache is an intermediate link in pig production chain. Pig will have been converted to the carcass and the carved meat. The change will cause fracture of the trace information chain, so this tache needs to solve the problem of information transfer. This paper took Laiwu Black Pig as an objective to analyze the source of information, the identification method and the flow of information transfer in the slaughter of pork trace system, and combine with the specific process of Laiwu pig slaughter design of the label carrier, information flow and slaughter houses trace information management system.It established the mechanism of information transfer by setting the RFID electronic tags as intermediate symbol carrier, pig head was removed and carcass segmentation as critical control point, and achieved the efficient acquisition information, a seamless connection with the information flow, and made possible the establishment of full trace system of pork.
