摘要 苜蓿皂苷是具有多种生理功能的活性物质,它可以影响动物体内胆固醇的代谢。文中主要介绍了胆固醇的合成及代谢,苜蓿皂苷的结构、生理功能,苜蓿皂苷降低胆固醇的作用机理。 Alfalfa saponins is the active substances that has a variety of physiological function, it can affect animal body cholesterol metabolism. This article mainly introduced the synthesis and metabo- lism of cholkesterol, the structure and physiological function of alfalfa saponins, as well as the mecha- nism of alfalfa saponins to lower cholesterol.
